Today the kids and I cooked for their parents. We made pork fillet and pineapple stir-fry with Pak Choi. And for dessert we made a peach fold-over pie. I have been waiting and longing to bake this pie and would be more than happy to make it for anyone who asks. The warmth in the flavors of a summer peach with cinnamon and nutmeg. Whole wheat flour, margarine instead of butter, and dusted with sugar. *sigh, these are the times that I am happy to be in the kitchen. Especially after it’s done and the oven is cracked open so as to cool off faster. With every whiff of the pie I felt as if I was in a dream where my body was lulled to sleep while my mind swirled with anticipation of the remarkable flavors to come. I can only imagine, well even thats not sufficient, The equivalent of what heaven will be like. If the scent of a pan with clumps of flour, evaporated cane water. plants, and some ground nuts and bark make me this intoxicated with happiness I can’t begin to think of the feeling of this to the nth degree. Thank you Lord for pies and the hands to make them. Amen.
